Valrhona a invit\u00e9 les club des Sud\u2019Cr\u00e9s de Gourm\u00e9diterran\u00e9e au c\u0153ur de l’entreprise, \u00e0 Tain l\u2019Hermitage, le lundi 5 novembre 2018. Laurent Navarro, le pr\u00e9sident des Sud\u2019cr\u00e9s, et Pierre Lamour, le vice-pr\u00e9sident, \u00e9taient accompagn\u00e9s de Cl\u00e9ment Higgins, Jean-Paul Bosca, J\u00e9r\u00f4me Raffaelli et Claude Krajner.\u00a0Tous travaillent d\u00e9j\u00e0 avec le c\u00e9l\u00e8bre partenaire des artisans du go\u00fbt. Depuis 1922 Valrhona imagine le meilleur du chocolat avec las p\u00e2tissiers de boutique, de restaurant et de chocolaterie.<\/p>\n

Le voyage a d\u00e9marr\u00e9 par une invitation toute particuli\u00e8re : un d\u00eener chez Rika et Fr\u00e9d\u00e9ric Bau<\/strong>, autour de leur table d\u2019h\u00f4te. Un moment gastronomique entre le Japon et la France, et le plaisir d\u2019\u00e9changer avec deux \u00e9picuriens qui ont, tout au long du repas, fait part de leur savoir culinaire. Ce fut l\u2019occasion pour certains de d\u00e9couvrir la douceur du sak\u00e9 japonais raffin\u00e9, aux pouvoirs aromatiques tr\u00e8s \u00e9loign\u00e9s de l’image que l’on a parfois de cette boisson \u00e0 base de riz.\u00a0Rika s\u2019est occup\u00e9e de toute la partie sal\u00e9e (sushis, chawanmuschi, tempura, teriyaki) et Fr\u00e9d\u00e9ric de deux fabuleux desserts, \u00e0 base de chocolat \u00e9videmment.<\/p>\n

Le lendemain, au sein de l\u2019entreprise Valrhona, les Sud\u2019Cr\u00e9s ont pu rencontrer Guillaume, un sourceur de cacao. La maison travaille avec 41 pays diff\u00e9rents. De Bali \u00e0 Madagascar, du Br\u00e9sil au Ghana, de la R\u00e9publique Dominicaine au P\u00e9rou, les sourceurs choisissent les cacaos les plus fins.<\/div>\n

La visite s\u2019est cl\u00f4tur\u00e9e au sein de l\u2019\u00e9cole Valrhona<\/strong>, avec David Briand et R\u00e9mi Poisson, <\/span>formateurs chez Valrhona.
